After a few years of drinking other breweries Pilsners and lagers, we asked ourselves why we didn’t have the same beer available. Ledgebier was born out of demand by our staff at Great Notion and our guests decided that we can keep it around. The recipe might be simple, but that’s kind of the point with a Pilsner.
We get a chance to show off the best Pilsner malt and Noble hops that we can track down. After some minor adjustments to our awesome Oregon water we mash the pale malt to get just the right pale golden color and enough sugars to feed the yeast while keeping the body light in this dry beer.
We use noble Hallertau Mittelfrüh and Saaz hops at several stages in the boil kettle and whirlpool. We let our lager yeast, and gravity does the rest in our fermenters for 6 weeks. We pour these beers a bit slower so you can experience all of those classic hop aromas escaping from that beautiful foam.
